Job Description:

Prepare beverages according to company specification and following alcohol selling law and legislation and measurements. To follow all standards, policies and procedures relating to food and beverage service in COSMO as laid out by Manager with a strong emphasis on guest satisfaction as per C.H.A.M.P.S training regime. All work is carried out with departmental guidelines. The ultimate goal of all our staff is to ensure that our guests enjoy their visit to the COSMO so much they feel compelled to return. Maintain a high standard of personal hygiene and body language at all times and continually seek to endeavor professionalism in job role.

Essential Duties & Responsibilities:

Customer Service

− To assume 100% responsibility for quality guests’ experience
− Is able to learn the names and personally recognise regular customers
− To serve drinks to customer in a friendly and helpful manner and with a smile bearing reference to service policies and procedures
− Be responsive and helpful with regard to off menu items such as classic cocktails and expand personal knowledge in this area as much as possible
− Present drink menus, make specific recommendations and answer questions regarding beverages to the guests/members of staff
− Thank guests for their visit and invite them to return
− Notify manager-on-duty any time a guest is not IOO% satisfied with their experience
− Maintain the agreed standards as in the Employee Training Workbook.


− Take beverage orders from servers
− Attends all scheduled employee meetings and brings suggestions for improvement.
− Clearly communicate with colleagues with regards to beverage orders
− Maintain a good working relationship with colleagues and management team
− Co-operate closely with colleagues and other departments to ensure a prompt service is given at all times
− Help to maintain a good working environment within the department and good working relationships with all other departments in the restaurant

Operational Responsibilities

− Wash glassware and utensils as required and ensure items are correctly organized at all times
− Prepare and serve alcoholic and non-alcoholic drinks consistent with the Cosmo’s standard drink recipes
− Ensure that pre and post service requisites are met and “Bar Opening and Closing Procedure Checklist” is Completed
− Keep track of wines, beers, liquors, and other supplies -weekly inventory count and report to General Manager
− Assist the restocking and replenishment of bar inventory and supplies
− Maintaining the product quality, by checking beer pipes, cordials, juices, drink dispensers etc.
− Follow the correct opening and closing procedures − Prepare garnishes for drinks and replenish snacks
− Maintains bottles and glasses in an attractive and functional manner to support efficient drink preparation and promotion of beverages.
− Ensure consistent cleanliness of the bar and cellar area
− To monitor the beer quality and conduct cleaning of the beer line regularly using approved chemicals
− Assist Manager in ordering bar supplies

Risk Management

− Wash and sterilize glassware as well as drinks dispensing equipment
− Maintain cleanliness in all areas of the bar including counters, sinks, utensils, shelves and storage areas
− Report all equipment problems and bar maintenance issues to manager on duty
− Report all potential and real hazards immediately
− To monitor the temperature of all bar fridges by filling out the Fridge Temperature Form (Bar due diligence) each shift.
− Be fully conversant with the Licensing Act 2003
− Be fully conversant with the Weights & Measure Act 1963 and any recent updates
− Have a general awareness of Health and Safety in relation to all tasks and activities undertaken in the department
− Maintain the highest standards of personal hygiene

Key Behaviors

− Must possess a positive attitude and work well with other team members
− Be able to communicate and understand the predominant language(s) of our guests
− Must be able to work unsupervised
− Must be available to work as late as midnight or later if necessary
− Must have the ability to operate a point-of-sale system.
− Be able to work in a standing position for long periods of time (up to 5 hours).
− Be able to safely lift and easily maneuver trays of food frequently weighing up to 20 to 25 pounds
− Be willing to follow direction and ask questions for clarification if needed.
− Be able to work in a fast paced restaurant environment
